@elrabbitsbbq I just went and saw you were from DFW, I live up on the Red River about 65 miles north of Dallas off of I35. I have been cooking on a pit for about 20 years and there is 2 things I have learned for sure, you have to keep your temp right and you have to know when to pull the meat off if you do those 2 things you can throw an unseasoned piece of meat on there and it will be ok, but they are so much better seasoned lol. You have some great recipes on your channel cant wait to try them

That's how I like mine!! great job I use to marinate mine in the bag for 24 hrs, then cook em in 6 hours, they would come out perfect.
