  • Pork shoulders are great for roasting. After watching the video it is the first time I knew that pernil was just pork shoulders.

  • Like everyone else said, that is NOT PR Pernil, spices all wrong and you shouldn't need a knife to carve or eat it. The meat should be falling off the bone.

  • It's good but not PR by any means. I in fact have a Puerto Rican pork roast in the oven and I made slits in the meat fat side and flesh side and stuffed with garlic slivers and also made a sofrito and marinaded the roast with that sofrito over night. Bittman! What's up dude?

  • All these comments are giving me the giggles. My Latina Brothers and Sisters, I am Irish and Japanese and I am even questioning what the heck is he making? I learned to make Pernil from My Puerto Rican, Dominican and Cuban friends.

  • @campcasey62 Dominicans don't make this...If they do, They learned it from the PuertoRicans it's like saying, karate is PuertoRicans when it comes from Japan. lol Cubans do somewhat similar, but they call it Lechon Arsao'.

  • This may be a nice dish, but it is not Puerto Rican Roast Pork. There is nothing Puerto Rican about it. Well, maybe the garlic, but he added so little of it. My family recipe only calls for a lot of garlic, oregano, salt, black pepper, oil or achiote and a touch of vinegar all pounded into a paste. This is the basics. Puertoricans will not use onions or cumin and no kind of hot pepper on their pernil. Our food is spicy but not hot. We prefer to serve "pique" or hot sauce on the side.

  • Mr., what the hell kind of pernil cooking are you doing 'cause it certainly not Puerto Rican or Cuban or Dominican. And what the heck is all the water u are putting in there, instead of apple cider vinegar or orange juice. That is not how a Puerto Rican cooks a pernil. And where on earth is the chicarron. Oh...ok...you are putting it back in oven. Oooo...here it comes...WHAT THE HECK DID YOU DO! The skin is burned and it's not cracklin. UGH!

  • Recipe:

    7 lbs. pork shoulder - picnic cut (with fat)

    9 garlic cloves (You may use powder garlic or ground garlic sold in glass jars - 1 tsp. equals one clove.)

    ½ teaspoon black pepper

    ½ teaspoon crushed oregano

    1½ tablespoons olive oil

    1½ teaspoon salt

What do you think bell pepper is? its definitely a type of chili, hes just giving the option of using whichever chili you wanna use, Bell pepper is used in sofrito, etc. besides chiles are great for your health and spice up your life try them! LOL

  • @tckmexi sorry but im 100% boricua and im yeah i don't like chile and most puerto ricans I know dont like chile neither and yeah we use bell pepper in the sofrito but the way he did this was totally wrong. And He didn't even add sazon, sofrito nothing on the pernil and when i say chile im talking about the sauce he did. You understand now? And every chile I tasted is hot as heck! I can't handle it lol so I think ill stay away from chile. But thanks for letting me know about chile:)

  • I personally am not Puerto Rican but I DO make my pernil by cutting slits in the meat, putting slices of garlic in the slits, season and rub down with a BLEND of Sazon, Adobo and a little sofrito and marinade with some Mojo Criollo that's makes it so juicy and tender! I have made it for years and it has always been a HIT when serving for guests. I don't know what kind of recipe this is that he's talking about. NO Puerto Rican that I know cooks like that

Cubans, Dominicans and Puerto Ricans all have a slight variations on pernil recipes, none using onions you freak. , so stick that in your Pernil and eat it.

  • Every country that utilizes pernil makes it different , but i don't think anyone uses onions in it.. I cant even imagine it tasting good with onions. Garlic, Lemon Yes. But not onions.

  • First of all , we don't add onions to our pernil , second , we don't add cumin or chile or anything spicy. We add garlic , Salt , pepper , oregano . Some people also add olives. We use vinegar and a little oil. That's how it's done in my family , we mash all the ingredients in a mortar and marinate overnight.

  • hahahaha he is funny, is not too Puerto Rican the marinating thing but it will work as well. Although we Puerto ricans like the meet with more salt than the regular american taste, so we add one teaspoon of salt for each pound of meat. It looks delicious
