If you can't find a white bowl I found that using the Marie Calendar microwave meals have a great bowl to use. I used it and the results were amazing. Diffused my light perfectly using my 430EX
My guess is he used the omni-bounce on the strobe to bounce light around inside the bowl, so that the sides of the white bowl would reflect a bunch of light, making the result much more even. If he didn't use the omnibounce, there would probably be a really hot spot in the middle of the cutting-board diffuser, and the sides of the bowl wouldn't get much light.

once on the inside, and once with the cutting board...?
