i tried this recipe but it turned out a bit dry(nice taste though) -i guess i left it for too long or the temperature was too high? my oven doesnt show the temperature. i also reduced the sugar to 2 cups...3 is just too much

I don't suggest you use anything else except shortening (Crisco). I tried using oil one time and it didn't work. I have not tried butter.

1 tsp of vanilla has always worked.. even for this large batch. However, if you feel like you want to add a little more... by all means do so.

i guess you can put it in 2 medium size pans.

you can bake it in a 13 by 9 inch pan, but just use only 2/3 of the ingredients and reduce the baking time slightly too......Around 20-25 mins ( depending on your oven)
