If they're boiled right, you don't have to "peel" anything on the crawfish. You can pull the tail right out with your teeth. I suck every crawfish head I get. And if it's big enough, I stick my finger in the head and pull all that yellow fat out and eat it. IT'S DELICIOUS!!! The fat inside the head is just as good as the tail!!!! Damn my mouth's waterin!! Oh, and most every time I eat a tail, I eat the digestive tract/vein too. lol

People down here typically crush the head while sucking on it (doesn't sound pretty does it ?). This releases fatty tissues and seasoning ----- very good stuff. I have had lobster but the typical seasoning of Louisiana crawfish is quite different. A crawfish boil with beer is one of my favorite things. Come down here if you get a chance -- we're a friendly lot.
