in samoa (small pacific island) we call it umu just look it up and see how easy it is then the way your doing it you may change the way how you do it....(samoan umu)

@bigbubbabuford Well you need a ton of coals to completely surround the piece of meat you are cooking. Essentially you are creating a 350 degree oven underground so you would follow cook times for a 350 degree oven. However, when we cooked the turkey underground it did not have the smoky flavor we were looking for. It is so wrapped in foil and underground that no smoke flavor could get to the meat. Fun way to cook and good survival skill, but for flavor I would just smoke that boston butt.

@foroke1 All of the hot coals provide the heat to cook the turkey. Once you cover with dirt there is no fire just heat from the ton of coals surrounding the turkey. All of the heat essentially creates a 350 degree oven underground. Same principals as with dutch oven cooking.

we do it the New Zealand native way we call it Hangi. hot coals, volcanic rocks and railway Irons buried in the ground covered with earth for 3hrs
