To easily kill the boats with cannons, you just ride up to them and stand point blank. and then shoot as much as possible, theres no way your gonna miss, and they always shoot right over you.

Oh and some advice:when you're fighting those boats with cannons, get as close as possible, if right next to it you will get backblast but from a few feet away its a breeze
