And if you don't cook vegetables there's a lot of nutritional value you can't get, because it's locked behind indigestible cellulose. :P

Uh, sure, and that's why herbivores need multiple stomachs and special enzymes in order to digest their food? Humans cannot digest cellulose. We don't have multiple stomachs, we don't have the enzymes. So if you think you can digest cellulose, you're either wrong, or you have the stomach of a cow. I'd like to see that.
I love good vegetables but it's hard to get them in most places. Unfortunately we Americans tend to not know how to properly prepare them so that we never learn to love them.
Whenever I try to eat defrosted peas and carrots I get an instant gag reflex. Fresh carrots are ok. I would think that its not just americans who don't know how to prepare vegetables.

No way, you've got to eat some real Indian food some time... too bad it's nearly impossible to find in the states.
Most Americans can do the whole veggies in with the pot roast thing pretty well.
