  • I got the idea for soaking my Sultanas in Jamaican Rhum from my mom's favorite ice cream she used to get at Laura Secords when I was a kid Rhum n' Raisin. After a week the raisins double in size and they get nice ,plump and juicy, Every time I would bite into one in the bread pudding it shoots a burst of sweet rhum in my mouth,Mmmm it is so delicious

  • @sandpikd2213 You can use sultanas or just dried fruit, you don't really need to add anything actually.

  • I like this video and recipe! There is so much butter and sugar in this recipe and the cooking demonstration so morbid that one is bound to develop some serious cardiovascular problem after eating two batches of this pudding, but at least one can die happy and feeling sane...

  • The funny thing about this pudding, it was originally made up of left over bread and butter with a few eggs and milk...this is definitely the rich mans version!

  • Normal sugar can be used but you'd have to put in less than if you had used brown sugar. I use only 1/2 a cup of brown sugar, so proportionately white sugar should be reduced to 3/8 cup.

  • I usually just estimate the amount. From a 250g (8oz) block of butter, I'll use 1/4 so I guess I'm using about 60g or 2oz. Then I'll just let it melt while I whisk, about 2 minutes. Then I'll add 1 cup of fresh cream and bring to the boil. Immediately turn off the stove and cool before adding eggs.

  • Bread and margarine pudding somehow doesn't have the same ring to it. I still prefer the flavour and texture of real butter. Studies have found that butter is actually better for health than the hydrogenated stuff. Of course, you can substitute with margarine but it'll taste different.

  • ew why? just omit the butter. the butter is was adds flavour. margarine and hydrogenated oils contain chemicals which slow metabolism and lead to obesity.

  • Just made this - and it was GREAT.

    I changed the recipe a bit: used French bread (1.5 big sticks, in 1x1" chunks), expanded a little (more sugar, more cream, more butter, 9 eggs, cinnamon), and didn't use the raisins (I was out of them), but the whole caramelized brown sugar thing made this fantastic (and you don't need the vanilla sauce)!

    Oh and I found you needed to cook it longer - like closer to 45 minutes.
