Sometimes if we use baking soda in a large quantity and the batter is not mixed well it causes the red color in spots . Try to use ENO and if it is not available use only 2 pinches 1/4 tsp baking soda and mix very well or you could sieve the gramflour along with the soda/ENO and then add the water /oil etc mixture and quickly mix well , may be using a handblender or whisk and put it in the microwave as soon as possible.

I was not at all pleased with this recipe. It was rubbery. A very strong after taste of the baking soda. You did not say when to use the 1/2 cup of oil or how much water to add to the besan to make the right consistency.
Looking awesome reciepe.. i'll definitely try it as soon as possible but ma'am i have a question regarding mixing. can we use a small hand blender to mix it thoroughly or is it necessary to mix it with hand only..?
u can mix it with blender rather it will give better results as more mixing can be donr with blender n more air can be put to make it more spongy n needless to mention do it in one direction

i m fifteen n i noe not to do tht
cuz dokla are suppose to have a mixture of taste n it only contains 1% of sugar

Hi Indigoanalysis,
The sour taste that we get by fermentation can be got by adding lemon juice or citric acid crystals to the Dhokla batter .
Here I have added the Eno with citrus flavor so I did not need to add Citric acid crystals.
The lightness that we get by fermentation is replaced by the use of Eno which generates the bubbles and makes it light.
So go for it after all , it just takes 3 minutes. What an invention.. The microwave :-)

Ma'm is it not necessary for the batter to ferment overnight? I used to think this was the most essential step.

Hi Manju,
Add Eno/baking soda just before you put the batter in the microwave dish. Try adding a little more oil in case the dhoklas are dry.
Cover with lid and don't cook it in open .
If the dish is cooked unevenly , also check if your dish is uniform in base.
If the dish in uncooked in center then cook for 1/2 or 1 minute more or alternatley allow the dish to rest inside the oven for 1-2 minutes.
Try 2 minutes cooking time and 2 minutes standing time for 1 cup besan.
