Most vegan recipes for hollandaise I found googlewise also contain fat (margarine or vegetable oil) and proteins (soy milk, tofu, soy yoghurt), just like the original recipe. Some of them additionally contain carbs (flour or starch), which makes it even more "nutritious"... and I bet they don't taste as good as a freshly homemade hollandaise... :-D But then again, I'm a purist! So don't listen to me... ;-)
The minute I saw this, I knew I had to try it. :) I just made the butter and put it in the fridge for tomorrow morning. Do you think basil is a good substitute for dill? I didn't have any dill....or am I a fan of it. ;P
