Just want to say that anyone who doesn't want to use a cleaver, you can actually use a paring knife! I use a dollar store knife that is not too sharp. Sorry, but those kinds of knives give me the willies. You just pierce it all around the middle part where there is a soft spot. Then you lever the knife to lift up the "lid" and voile! (Of course, these are instructions for a young, shaved coconut and not one with that hard, outer husk.)

I had so much trouble with my first "baby" coconut that it was very funny as I thought I might cut off one of my fingers...I have majorly improved on this process!! lol Yeah me. Yep, exactly how I used to do it at work every day. After the top is off, then we would dump out the water into bucket (for using later in smoothies and raw desserts or for simply drinking) and then we'd wack the coconut right down the center a couple times and scoop out the meat. Good times, well that is if you're only doing one. Doing 60 coconuts at one time gets a bit tiresome.

david wolfe shows a safer, quicker way: don't hold it at all for safety. then just hit it off center, rotate nut and hit again, rotate nut and hit again. after the 3 off-center knife marks, you get a triangle shape inside them. you just pop out that triangle and the nut is open for a straw or pouring. keep free hand back and strike down the center to split and get to the meat. i think you are so sexy and are doing great work. keep it up
