I'm making this tonight with brown rice. 2 cups of brown rice. Seasoning salt, garlic salt with parsley, lemon pepper for the chicken seasoning and I'm going to add greens or spinach.
No special rice (not even instant)...just regular rice. The kind that normally cooks by boiling water first then simmering for 20-30 minutes.
And to answer that other question about timing...you definitely have to cook it long enough for the chicken to be done so - by then rice will surely be done. so after 45 minutes, I'd take a piece of chicken out and cut into it to test...I know that's 'cheating' I hate uncooked chicken. If not done, I'd check again every 10 til done.
You know what I enjoyed about this video? I liked how the family joined in together to make this. It felt like your mother or aunt showing you how to make a simple meal. It was nice.
Tairakali - You're so right. It IS so stupid that I didn't show it cooked. I LAUGHED when I read your comment. That's rare. Actually, my family had just lost our sister, and my other sister and I were using this video to show Barbara's kids how to cook a few things. I can't believe it's almost a year since she's gone.August 15th. but I see your point because I use youtube to learn recipes too - but this time, we were using it in it's purest form; to share info for a purpose to family.
@kowalile99 I'm so very sorry for your loss. I lost my mother just 2 months ago, as she passed away suddenly in my arms, to a massive heart attack. My condolences to you and your family.
Thanks for this recipe, was super easy and super delicious (thats what my kids said). This will definitely be in my fall/winter cooking rotation.

Sounds really yummy. But sad, that you don't cook it from fresh ingredients (accept for the chicken)
Try it with fresh mushroom, cream, salt and pepper. it tastes sooo much better!
