  • I agree there's as many different ways to make gumbo as there are people making it, and while okra is the soul of gumbo, a lot of people don't use it. However, what makes any good gumbo worth eating is the roux. A good roux will take 15 to 20 mins to make, not 2 or 3. Turn your heat down, simmer it longer and stir constantly. I'll bet you like the flavor a lot more.

  • you shouuld add all the flour at once so it all cooks evenly

  • that's how he cook gumbo, people can add or take out any ingredient they like. some people might not be able to eat certain stuff that is in the gumbo, that is why there is many different ways to make gumbo. either you like it or not..you shouldn't judge his cooking, at least he made an effort to show his version of gumbo!!!!!

  • Cut me some slack. We were cooking for a 3rd Grade school on Paul Prudhomme. Note all of the spice bottles were his brand. It tasted ok, but I would agree that there are much better recipies.

  • I'm from louisiana and I've seen gumbo made many times but this has got to be the first time I ever seen it made in a skillet instead of a pot

  • No doubt that's not real andouille sausage. If poster Is reading this I'm curious to where you're from,etc. In Wisconsin I substitute my sausage for Usingers and they're not what you would get In Louisiana but their alright. Gumbo sure looks good towards the end. I'd eat It regardless!

  • You don't need okra. In Louisiana we understand what "gumbo" means In Africa. Though we do make "okra" gumbo ha. But that Is different then other gumbo. I didn't watch the video but research yourself. Gumbo Is made different by everyone and from different areas of Louisiana. N.O. Gumbo compared to other areas of Louisiana can be much different,etc.

  • your roux was too light in color and your gumbo will spoil faster than normal. the word gumbo comes from the african word okra.

    i didnt see garlic nor bay leaf and thats not real andouille sausage if your going to make real gumbo do a little research your misguiding people and thats not cool.
