I just had a thought. Perhaps the real reason Coyote the Trickster is so attached to Peter Maza is because he is his descendant? Think about it: we know from Titania and Fox that the fay have fallen for/had kids with mortals. Perhaps somwhere along the line, Coyote fell for a mortal woman and had children with her, and their descendants are the Mazas? It makes snese.

Most shows today, they shove the "everyone is equal, ignore ethnicity differences" stuff in your face so much you just wanna hurl! But they didn't make as big a deal about it in Gargoyles, letting the kids come to the conclusion that you shouldn't judge people based on ethnicity.
