When you use the stern rudder to carve a wave you need to use more torso rotation. This means you use the larger, stronger muscles in your back rather than the smaller arm muscles. Trust me it makes carves cleaner, smoother and better looking too.
fishgopop, explaining how to kayak surf here would be rather tedious and lengthy however in essence it goes like this:
1) square your boat 90 degrees to the direction of the wave
2) start paddling BEFORE the wave hits
3) once you can feel the stern (back of kyk) getting lifted paddle the hardest you can
4) enjoy the ride
What you are experiencing is broaching where the kayak's stern gets pushed sideways from the wave coz you don't have enough initial speed to stay in front of the wave.

I have improved my technique since but still not great. I am somewhat not very "bendy" :-)
