how do you change assists?

can u control with analog stick? it's really hard to do a bf or ud and vice versa with a d-pad

No it doesn't, I was doing this in training mode. The support however, doesn't require any stock in the super meter and you can use it at almost anytime, like when you're knocked down on the ground, or while you're in mid-air.
