for those of you wondering, before every match, the chefs are given a list of between 5 and 10 possible secret ingredients. My source is the iron chef america battle of the masters dvd, the bonus material disc
they're informed of the theme ingredient an hour beforehand to givem some setup, and then after the fact they're given three hours to replicate each dish for each judge. there was a behind the scenes special on food network awhile ago.
Last time I "Untangled my Chopsticks" it was the night after that Tijuana hooker. Don't ask, but lets just say it involved a poncho, a ripcord, and an over zealous prostitute. Needless to say, she then explained that she had a lot in common with the first part of the life of a Japanese Marsh Crab, don't know what that meant.
lol i loved how brown said "now japanese marsh crabs, they change sex a few times in their lifetime. they get to be a boy, they get to be a girl, boy, girl, boy, and then go into a deep fryer. that is the life of a japanese marsh crab." XD
i think they know already how they have to cook the crabs before the show is on. because i see that they prepare well. even tho they are very good chefs, everything should be plan. No Kitchen is without menu plan. it would be mess
@mchan2048 i think that they actually were aware of what the basic menu was...They just went to do the dishes straight even without discussion...haha.....
@furtzi1976 They learn what the secret ingredient is days ahead of time. They spend days practicing these dishes in their restaurants. I know for a fact that Batali used to do a 3-4 day menu run through in babbo, ten years ago.
@furtzi1976 THE CHEFS ARE GIVEN A LIST OF 5 DIFFERENT INGREDIENTS BEFORE THE SHOW AND THEY PREPARE 5 DIFFERENT MENUS. THE MOMENT OF TRUTH IS ONCE THEY GET TO KITCHEN STADIUM WERE THE CHAIRMAN ANOUNCES THE SECRET INGREDIENT WHICH IS CHOSEN FROM THE LIST OF 5 INGREDIENTS .
The comment at the beginning of them leaning to their opposite (morimoto-> american, and the other guy -> japanese) is soooo true here. It really looks like they've just switched bodies o_O...

cream chowder w/crab torte||ini w/gri||ed, herbed toast
crab ceviche
champagne/saffron crab risotto
