  • why in the world are you using lighter fluid when you had charcoal in a chimney why not light it in the chimney and go from there....

  • @sh0rtbuskid 185 degrees was written on the screen but I only go to 165 degrees because that is what it says on my thermometer for chicken. 165 is safe for all foods.  And at 165 his chicken was a beautiful golden brown. At 185 it looked like roadkill. LOL ...but maybe he did that because he likes a crunchy skin. These guys know what they are doing so who am I do say different. I love these boys!

  • Another great video guys! I watch all the time and enjoy seeing fellow smokers broadcast to the world the art this has become. We enjoy cooking with the most primitive of styles. Although, I prefer wood logs over adding charcoal and chips, the outcome is just as grand. Keep up the great work.

  • I enjoy the honey, butter, and Paul Prudomme's Meat Magic or even a Sweet Baby Ray's sauce. Good video! I've had to go 36 hours without eating before my operation, so this was tough to watch. I'll be having some split roast this weekend for sure.

  • as great as this recipe is it also points to one of the greatest flaws in slow cooking. the wonderful scents produced in the slow cooking method make you so hungry that it is a test of endurance to see if your will-power can hold out against one of your most basic desires which is the desire to devour some damn good food!

  • If you know anything about BBQing you don't use lighter fluid or matchlight.

  • If you don't use lighter fluid, what are you putting on your briquettes before lighting them in your videos?

  • Use a charcoal chimney with newspaper under to get the charcoal going.

  • That makes sense but in the video he is putting something that looks like lighter fluid (1:40 min ) on the coals where he says at a comment below that you don't use lighter fluid. I don't know what else the liquid is.

  • I can't get enough of your videos! Truly amazing!! I have a question about the "Salad Oil" dressing that you use in this video. It appears to be a bottle of Wish-bone Caesar dressing. However, I get thrown off about this because Wish-bone Caesar dressing is creamy white. The dressing that comes out of your bottle appears to be a nice italian oil/vinegar combo with a sweet color! Are you using your own mixture in that bottle, or does Wish-bone sell that off the shelf? Please do tell!

  • hi Vikkar, that salad dressing we're using is Italian style Oil & Vinegar. Make up your own vinaigrette or use ready made off the shelf products like we are here. Using just olive oil will produce a nice tender and moist chicken as well! -BBQ Pit Boys

  • Looks great, but I have one question: Why don't you butterfly the chicken first? Seems like it would be a good idea to get rid of the backbone and breastbone before cooking. Does it matter much? (That said, I have a chicken prepared using your method on my grill cooking right now. Can't wait!)

  • hey renodavid, we found that by using this method (without removing the breastbone and backbone and with the skin intact) keeps the bird real moist and tender. -BBQ Pit boys

  • times is relative.....i.e. how hot the coals, how much meat in the grill, ambient temp., wind, ETC. The chicken meat near the bone should be around 180f before removing from the grill.....

  • Ijust cooked this today exactly like this except I also added Old Bay seasoning to the chicken. It was so tender it almost fell apart taking it off the grill. It was so damn good!!!

  • Never did the lemon cleaning you can try a half of an onion. After im done cleaning the grill I just throw it in the fire along with wood. Not sure if it gives an onion smoke I just tend to do that.

  • Hey how much was that Weber grill? And how long have you had it? I'd do a lot more outdoor cooking if I had something a little better than my £20 grill. I'm in the UK, so everything is about 1/3 more expensive anyway!

  • You can get a good idea what a Weber will cost ya by going to Amazon. The Weber in this vid is about 10 years old and has served up 100's of meals. This model with the table has been discontinued, unless you get the auto-charcoal lighter model. You won't be disappointed with the quality of a Weber grill.

    What I like is you guys use products that can be purchased all across the nation, not like big TV that uses stuff I've never even heard of or I don't have the time to dig a pit and burn my own oak logs to make charcoal. Again great job!

  • We try to keep it simple and stick to "real food" around here, using meats, sauces, spices you're likely to already have in your fridge, on your food shelf, or you can buy at your local market -we leave the exotic or imported stuff and recipes to the Food Channel!
