That is the strangest way of wrapping a dumpling I have ever seen. But then again, I'm mostly familiar with southern Chinese ways of wrapping and may be this is a style from another part of China.

Not necessarily. My parents taught me to seal it with water as well. Both of them were born and raised in Taiwan.

This is just showing how you would fill and fold a dumpling. Egg is used to seal it btw =3
