If you let it rest in the pan, won't that continue to cook it and therefore dry it out a bit, due to the heat held by the pan? Maybe remove it to a plate instead.
You can simply fry a steak on a pan and get the same result. 6 minutes on each side? It will be too well done. A good steak is 3 to 4 minutes on each side for a nice medium rare. As I said pan frying in olive oil for 3 to 4 minutes will give you excellent results. Broiling seems better for cheap cuts such as top round and flank.
For what purpose is salt? Salt serves NO cooking purpose at all except for flavor. It doesn't make it cook faster or better but it CAN suck out the juices. Why not leave the juices in the meat where you can eat them? You should basically NOT salt ANYTHING you eat until it's on the plate in front of you and you've taken a first bite and decided HOW MUCH salt you're going to put on it. The only thing I ever salt is steak and eggs. Oh, and there's no need for the SALTY language.........
NEVER, NEVER salt your meat before you cook it! It sucks out juices. Salt it all you want when you eat it! Granulated garlic, WITHOUT SALT is a great steak spice.
A good sirloin (top) is twice as tender as Top Round/London Broil, often more tender than a New York and always more juicy.
You can't beat a USDA Prime sirloin steak from Costco!!!!
@bryanwade this is just shit what you are talkin. When you salt your meat sand let it sit for 2 hours in the fridge, than its bad. But when you salt it just a bit befor you cock it, its no problem. So dont talk shit like this ; )
How long do I cook it if I like it medium rare?

@ARTeFAKD the whole point of the video was to "maximize flavor." that's WHY you would use salt.
