How is this done? The game seems to be flash, but how is the image/shape/color tracking done? I'm guessing a separate setup (using other lib such as opencv) that communicates with flash via UDP, or is the analysis done within flash itself by way of the camera?

To tell you the truth! It feels like there are to many inconsistencies. Like where would the censer be aiming at. How sensitive is the censer and how many people is it able to pick up. And how is it able to eliminate the amount of 'foreign' movements.

Then again if it is just some guy "behind the curtain" who is really working the controls. Does it really matter? because it still gives the audience something to do, as well as giving them some level of amusement! He does remind me of Dane Cook

It takes quite a bit to get me into a theater these days. I hate the ads, I hate the parents who bring kids to rated R films (who then cry the whole movie), the arseholes who text their friends and wave the glowing phone around, the dipshits who kick the back of my head (yes, my head, not he seat), the morons with a 75 IQ who feel the need to repeat every line and comment on every scene, and my personal favorite: the asswads who talk on their phones.
