Professor Longhair has a book out - its in that. Theres also a book called New Orleans Piano Legends which has Dr Johns version off Gumbo. Both are very good versions and should get you exactly what you need
Dr. John has a dvd series called: Dr. John Teaches New Orleans Piano. The dvds come with the sheet music. Tipitina is found in lesson two of the dvd set.
