I started out imaging The Orion Nebula with a DSLR on a cheap tripod, with a 50mm lens. A Goto AZ-mount is a good and easy way to practice, but a heavy/sturdy GEM-mount is normally what you'll need for longer exposures. If you know how to stack images in software, you can get amazing results even with the tripod, but you'll need a lot of short exposures (subs in astro lingo).
All this to say: Go and try shooting the stars! It's not easy, but great fun.
