Look, when I try to beat him with Sonic it goes kinda good, but when he starts destroying the platform he doesn't react when I jump on him. So I end up dead. :(

Are you talking about after you've defeated him? If that's the case, then just get out of his way when he does that. Don't try to hit him. After he destroys one platform (the one you are on until you get out the way), he'll fall into the ground and you will have won.
