  • Thai noodles always are enamelled with oil already, so you mustn't add more oil before you add your noodles. I always make pad-kee-mao, but I change noodles to Thai jasmine rice. It's delicious and it no need to add much oil, so it's might be healthier. You should try it once!! :)

  • It looks good, but traditional "drunken" noodles don't have any alcohol.

  • Probably my least favorite dish made by Kai, even though I LOVE Pad Kee Mao (Drunken Noodle) I am not sure I am am adverse to those really thick noodles, the ground pork or something else in the preparation, but this recipe is not restaurant quality, and certainly not on par with many of Kai's other dishes.

  • This looks great, but the ones I get in this area have a slight twist to them. They seem to all have tomato chunks and egg in them as well. They also have bell pepper and onion. When would I add the eggs and veggies in, if I wanted to?

  • I added the bell peppers in before I put in the basil. You can also cook them in a separate pan, then mix them in the wok, then add basil.

  • so my wife makes drunken noodles and the noodles are always mushy! What should she change in order to make them where they aren't mushy???

  • @msalak87 Maybe she's boiling the noodles beforehand instead of just soaking them in hot water? I think boiling will eventually break down the wide rice noodles. Just a thought.

  • what is this? this isn't pad kee mao. pad kee mao is served on top of rice. there is no alcohol added, it's 'drunk noodles' because of the spice (which drunk people can't taste).

  • I looked in my local Asian and International food market . . . they did not have the broad noodles! They only had pad thai-sized rice noodles, which I used instead. It came out pretty well. Still, I love the texture of the wider noodles, so it sucks I couldn't find it! I also found that they tasted a bit too soy-saucey, so I opted to use a lot less soy sauce. Also I couldn't find sweet basil, so I used regular basil, and it tasted the same, in my opinion, as my favorite Thai food restaurant.

  • @confooseddesi89 Many areas have a fresh version of the wide noodle available in a refrigerator. The pack is actually 1 or 2 large sheets of noodles that have been folded to fit onto the small foam tray that meat comes in and wrapped tightly with plastic film. The package label differs depending on the general culture that frequents the store the most but can go by Wide Rice Noodle, Wide Pho Noodle, or Chao/Chow Fun noodle from what I've seen.

    Good luck in finding them. =)

  • You can get it at a Thai-Laos Market. And the only reason yours stick is because you didn't mix the oil well with the noodles.

  • Tastes great, very easy to make. A mistake I made the first time was buying rice noodle sheets that were not really fresh and were stored in the fridge at the store. I suggest buying it fresh, where they store it at room temperature. You may be able to boil the noodles if they are cold like that, but I am not sure how you do it. Also something I found was cooking sake at one of the stores I went to. Thank you so much for the recipe Kai. You should have your own television show.

  • My husband and I love thai food. This dish is our absolute favorite. I figured I'd learn how to make this so that we can still enjoy the dish without paying an average of $7.95 for it outside. I tried this out yesterday and I just want to give a big THANK YOU to Kai!!!!! I'm very picky and was delighted when it tastes EXACTLY like the ones we order! I am going to surprise my hubby with this. You're awesome Kai, please keep posting your vids!!!!! =)

  • I can't remember what they are specifically called.

    You get them fresh/refreigerated section at an Asian Market; they are sort of like sheets of rice noodles that you have to cut into strips with a knife.

    The sheets of noodles are rolled up in the package.

  • fish sauce is very strong and fishy, not much of it is needed. soy sauce is made from soy and has a very distinct taste that you can't get from anything else. soy sauce is used in alot of thai dishes

  • true cooking is fusing ideas and making another great dish. If cooking had rules that had to be followed, then food would be bland and there would be no creativity.
