I can't remember what they are specifically called.
You get them fresh/refreigerated section at an Asian Market; they are sort of like sheets of rice noodles that you have to cut into strips with a knife.
The sheets of noodles are rolled up in the package.
fish sauce is very strong and fishy, not much of it is needed. soy sauce is made from soy and has a very distinct taste that you can't get from anything else. soy sauce is used in alot of thai dishes
true cooking is fusing ideas and making another great dish. If cooking had rules that had to be followed, then food would be bland and there would be no creativity.
i understand that but this is a cultural dish, by saying it's thai he should use proper ingredient why not use pad kee mao instead of thai drunken noodle if he was going to use soy..i don't disagree with you bro but by adding thai to it he makes it a cultural dish...

I added the bell peppers in before I put in the basil. You can also cook them in a separate pan, then mix them in the wok, then add basil.

You can get it at a Thai-Laos Market. And the only reason yours stick is because you didn't mix the oil well with the noodles.
