@meihuazi try using the broiler, bring the skin close to heating element within 2-4 inches, do this only when the pork is done baking. it will puff and bubble and be crispy. also, try to score the skin by crosshatching very finely, the puncturing that she seemed to do is not enough, think of a sponge cake, lots of air pockets, right? very light isn't it? the skin is leathery without air bubbles, the puffiness (air pockets)of the skin is what makes it crispy! good luck & good eats!
Worked great, allthough I marinated with red pork seasoning mix (2 spoons) and 1 spoon 5-spice-powder for 0.7kg pork belly meat, also 2 spoons of williams whisky and a little vetsin . Followed the instructions in this vid, very tasty!! Cooking the meat and scraping the skin with the knife was the secret. Thanks very much for this educational video.
@mathijs4600 here is a recipe that is more traditional chinese: red fermented bean curd, 5 spice, sugar, salt, black pepper, and garlic rub all over the pork except skin and bake til done and turn on broiler to crisp up skin bring it within 2-4 inches of heating element of broiler til charred a little, then you will know that part of the skin is done. try score skin finely by crosshatching with knife - better results! good eats and good luck! :)

you can use sharp pin/stick to pierce the pork skin. It helps skin surface bubbling and crispy.
