Matt, great vid, but I’m sorry I have to say this as a Ukrainian, many things are incorrect. Only Polish call them “pierogies” , we call them “vareniki”. Also, a Ukrainian will never fry them. Another minor difference is that we roll out the dough into circles, not press the circles out to eliminate the waste, and the need for your pasta machine, plus save time. Not Ukrainian kitchen, but great otherwise!

This is very similar to how my bubsha taught me...except everything was saltpork, not bacon.
