@garrettj94 Filet Mignon is a cut from the smaller end of the tenderloin. If you're making a big wellington, you'd use the whole/most tenderloin but if you're making like individual sizes, you can use two pieces of filet maybe.
beef wellington is very tasty....just don't blend that damn mushroom unless you want to make a mushroom juice. better roughly ( or finely) chop it with knife instead. safer for noob.

I think it's the way it was edited that made it look as if he sliced it early. If you took that for granted you'd have said it was cooked in a second.

I think he sliced it right out of the oven for the sake of production of the video. Normally, you're supposed to let any piece of meat rest for a few minutes after you cook it to let the juice redistribute. I'm not saying he's not a great chef (He could stop behaving like such a tosser), but rather that for the sake of that video he sliced that meat too early.
