    YouTube was working on a new way to add captions, which was just released a few weeks ago.. I'm still working with it, so that I can add captions to the videos that need them... I'm just having some technical kinks... sorry for the delay...

    Just took a seminar about 501 Compliance, still trying to amass all that too...and how I can apply it to my stuff..

    I've been a huge fan for ages and tell eveyone about you here in London.

    I too wondered about the new video; at first I thought 'bad hair day' - but that's just not possible with a 'do like yours; then I thought =gasp= 'embarrassing pimple', but I know like all good trailer park ladies you'd be well adept with a cover-up stick; so maybe the secret's in the fact it's a locked off camera, as in you knocked one out on your own!!

    But whatever the reason - I loved it!

    I love this variation on a great British dish. I'll be sure and make it. In England its called shepherds pie because we make it with minced lamb. If you use Beef in place of lamb its a cottage pie. In British gay speak. Cottage means a gentlemans rest room, one thats good for meating other like minded guys. I think in the States you call them tea rooms.

  • When I'm in the mood for beef shepherd's pie, I buy a frozen one from Schwan's delivery. (which isn't very budget-conscious of me) This casserole would have made me cry as a child, but as an adult, I've embraced casseroles - can't beat one-dish easy meals!

  • My husband is French Canadian and Shepherd's pie is a staple there. He makes it with ground beef and onion, garlic and spices, corn and mashed potatoes with paprika on top. It's yummy! I'll have to show him your version! Thanks Jolene!

  • Our Dollar Tree store carries Sea and Kosher salt now. :-) I like to take a can of beef stew and spread leftover mashed potatoes on top. That's how I make Shepard's Pie. I'll have to try it with cheese next time. Thanks Jolene.

  • Hey Jolene, Shepherd's pie is a very popular dish in French Canada. We call it "Paté Chinois" (roughly translated: chinese pie). The origin of the name comes from chinese men who built the railroad in Canada, back in the 20's I think... they ate this all the time and that's how it got its name. Every French-Canadian family eats this, but for us its just ground beef, corn (cream corn is even better... yum) and mashed potatoes on top.

    You are correct, many places call this Cottage Pie, but many grew up calling this Shephard's Pie, cause we just wouldn't eat a fluffy Lamb..

    Many have fond memories starring in their first stage play in childhood as a Lamb.

  • My family never had shepherd's pie much until my sister went to Oxford for a year and brought back the skill from England. She actually has an Irish recipe and for the most part lamb meat is preferred. I believe the recipe has an Indian influence because there is cinnamon in the list of spices. Odd, but it tastes really good. I'll have to try to remember the recipe and post it.

  • Yeah, cinnamon sounds odd, but I have a middle eastern cook book and there's a few recipes that use cinnamon and nutmeg in the meat and the dishes are num num nummy!!!

  • Darlin' why no shots of your purtey face? I make it similarly...but I put frozen veggies, and a can of mushroom soup, ketchup, and red wine and the corn in the mixture too...I always use garlic mashed taters too...MMMMMM! Shepherds pie is delish!!

    I lived in England for 7 years and usually Shepherd's Pie is made with ground/minced lamb. Cottage Pie is made with ground beef.

    I've never used lamb before, and I still called it Shepherd's Pie.

    Love your videos and more casserole recipes would be awesome!

  • Joleen ya did it up good this time! I know what I am making to take to our Senior Potluck! Being a frugal cook myself your addition of the mexi corn on top was nothing more than genius! Never dreamed of doing that! Love the easy seasoning of the ground beef, no chopping involved and the instant taters.. who has time to whip up a batch for a pot luck where the seniors inhale it all without much regard.   • Hey Jolene, that looks delicious, can't wait to cook it. I just wanted to mention something about salt, and the chemicals contained therein. It used to be a big deal that iodine was added to table salt, but that was actually a great public health service because a lot of people didn't have access to seafood (another good source of iodine), and if they didn't get it in the table salt then they'd have problems with their thyroid gland, like great big goiters.
