  • I agree with sh97,my friends make puto but it's not thesame as they make it in Calasiao.it's the best!! I heard they mix it with fermented rice that's why you get that distinct taste.

  • Yes u r right Phiippine mangos are the best of all mangos in the world. I live here in the US and there are stores selling "Manila Mangos" but when you look at there's a smal sticker on the fruit saying that the mango was produced in Mexico. So it means it's not from Manila. LOL

  • @pinayvacavilleUSA The green oven is available through Baking Manufaturers. My sister got hers from Dagupan, which is only 20 minutes away from our house.

  • bigbear, It just kills me that somehow the recipes for these native delicacies were not shared openly with the community. My mother is from Pangasinan, yet she cannot tell me how to reproduce puto in the U.S. Most puto made in the U.S. is flour-based, too heavy, and too dense to be passed off as the real thing. I would LOVE to learn the proper way to make it, but it's like the HOLY GRAIL of Filipino delicacies. Someday...

  • I've found the Filipino way of doing many things (including puto) very charming. I would do Puto the way I saw Filipinos do it if I could get away with it, but Americans (yes I said it) are soooooo finicky, so I have to find another (less satisfying) way to enjoy Puto from beginning to end.   • Thanks for sharing the video. Nowadays Rice flour is available commercialy (So we can make bibingka, puto like cake mix. Another variation is palitao("Showing" in english) the process is reversed however. We soaked the glutinous rice first then we use a grinder to make a paste or something like a white dough. (Which we called galapong from that we make small balls and we indent them and put it into boiling water. As the dough cooks it rises to the top (hence the name litaw or palitaw). Enjoy

  • I tried balot, because I promised I would. It wasn't all that sensational, and I've never been fond of duck eggs (except when used in leche flan), so it was a so so experience. I prefer the local foods (over the corporate versions) any day.

  • Thank you so much for posting this. Very educational and is a great way to preserve what is part of history and tradition. I've always hoped that these traditional dishes of the Philippines as well as the methods used to make them were videotaped so that they are preserved for future generations. My mom's from Pangasinan and has friends there who also make puto calasiao. She said that if I go home, her friend will let me see the puto making process.

  • A lot of modern farming is done in the Philippines, no doubt. But, a great deal of it is done the old fashioned way. The same is true with puto making. Here, I show a bit the old mingled with new ways of doing things. Amazingly enough, I thought of it as relaxing.
