The Feeling I got was that a utility knife would damage the fitting rendering it unusable? I guess you are saying only cut through the ring and not into the pex tubing...
@devonplumley you can heat one side of the ring with a heat gun and use a utility knife to cut through the ring. Then u need to apply heat to the tubing and pull until the fitting comes out. This would let you use the same fittings again. Make sure you cut the fitting from the rest of the tubing before you begin. If you don't have a heat gun, you can use a hair dryer, but it will take much longer.
