It's the process of making mocchi (balls of sticky rice paste). The rabbit in the moon is supposed to make it. It takes two people, one to mash the rice and another to knead it.
Tsukuyomi (the Shinto moon god, who for some reason is called Yumigami in the game) was sent to a feast with the goddess of food, Uke Mochi, by Amaterasu. When he arrived there, however, he killed Uke Mochi, which greatly angered Amaterasu. As a result, the sun and the moon never occupy the same part of the sky.
I wondered why I kept hearing things... XD I had thought it was distorted repetitions of characters' names, sounds taken apart and used in different places.
When Ammy is carrying Nagi to Orochi dressed as a maiden, you can clearly hear Nagi say "Nani?" as in "what?" or "huh?" When the characters say one word phrases, you can clearly hear the Japanese dialogue. :D
@darkneji7 That's sort of believeable, yet I have the english version and if I listen ccarefully I can understand what they're saying. Maybe my brain's just trying to pull sense out of the jibberish. I still LOVE the game though.

This isn't the first game with a silent protagonist. And Capcom was the overseer for Okami (Clover produced it), not Nintendo.

That scene gives you the crescent moon skill.
We see a man in the moon, the Japanese see a rabbit pounding mochi, which is why the rabbit gives you the crescent moon skill
