@bobwatters The process of thinning it out is two fold. It makes it bigger obviously but also, one of the biggest issues with cfs is the breading falling off. by pressing it, it actually adheres the flour to the beef. Our test when training new cooks is to pull it out of the fryer and shake it like crazy. If no breading falls off, you pass!
@chefjbf1973 i understand why you press the flour into it and also you want it thin b,c it cooks evenly. but this is just too thin. when you thin it so much that there is a hole in the middle of the steak you went too far! its chicken friend STEAK not chicken fried breading. you gotta have some meat when you bite it not just breading. I would much rather the breading fall off than be eating just a pice of breading with a paper thin piece of meat in the middle.

My kitchen is open and I am always willing and open to learn new ways to achieve greatness in food. You tell me the date and I'll be there with gloves on and lots of seasoned flour and cubed steak.

That gravy sounded realy good and i dont normaly use gravy on a good country fried steak but i would definatly try that. And i agree its allways fun to try something new most people i know are to set in there ways to try anything diffrent lol. A easy change on this is to use venison instead of beef its realy good!
@chefjbf1973 let me know what you think about the venison! it probably wont be any time soon im realy busy and dont see it letting up soon. but i got a realy good family friend in Dallas so when I get time to visit I will deffinatly stop by! hopefuly ur a beer drinker lol.

Not familiar with Coyote Bluff's but i do know CFS. The one in this video was amazing. As for side, well, it's a cfs how-to video...
The novel thing about Franke's CFS is the technique. No one else in all of Dallas--or even Austin--does it tjhis way. And the crust is perfect.
