The Distilled water is added to the batteries to keep them above the lead plates in the cell. Distilled water is used instead of tap water because minerals in the tap water can adhere themselves to the lead plates in the battery making them less effective, or short lived. Also adding this to "fresh battery acid" is just a precaution, especially if the acid is very close to the plates as another one of the batteries was at this time. Make sure you check your batteries on a monthly sched.

Battery acid is only about 34% to 37% odd from memory, which isn't too bad so long as you don't leave it on your skin all day.

What's REALLY annoying is getting it on your clothes. If they're not rinsed and put through the wash straight after, they will be covered in holes by the morning.
