And the other thing is, not all chefs are equal, it depends on the rating of the restaurant, the hierarchy of the staff: you might have one great woman chef and 20 other chefs helping her. you need a kick ass powerful ventilation system for that many powerful high pressure burners. Depends whetehr its natural gas or lpg but ideally you want the burners away from the seating area in a seperate kitchen area with air intake and extractors. It has to be very carefully balanced. I'm sure its fine but high pressure burners in the dining area is not the safst option
don't be affraid to use you're wok for other stuff like scrambling eggs also it is great for this. scambled eggs in a wok takes 5 seconds just dont overload the pan for speed efficiency
doesn't matter the color. there's a chinese family who makes the best mexican food around the corner from where i live. and there are mexicans who roll the best sushi in a restaurant down another corner. i make the best pb&j and i'm not even american....

lol this so true i live in Cali and i eat a lot of sushi and chinese food and most of the chefs are mexican.
For example my favorite restaurant panda express(i know its no chinese food) all have mexican chiefs and i eat there for lunch everyday.
