  • no idea on how to do picanha, you only need salt, plus you didnt cut the excess of fat from the side, then you NEVER cut it from the sides, only from the front or back

  • It's known in the USA as tri-tip. I always ask my butcher for a tri-tip that hasn't had the fat cap trimmed. Good stuff.
