As someone interested in both science and Skepticism I have to agree with you that it is important not to become arrogant using those methods of enquiry because I think it is possible to become trapped in that type of thinking to the point of not noticing when you have a bias towards automatically debunking things. Starting from the 50/50 point is a great idea.

Your advice in regards to skepticism vs gullibility reminds me of a quote by Richard Dawkins:
"By all means let's be open-minded, but not so open-minded that our brains drop out."
