@TheGrizzlyB - 150 would be the best temperature for something like a pork tenderloin. However, say a steak would be overcooked at that temperature if you were aiming for Mid-rare. Chicken must be cooked to 165, so pull it out at 160 and allow the carry-over cooking to take it to the optimal temp. Any ground meat product also must be cooked to 165 to guarantee any foodborn illness isn't transfered.
