  • Really glad your back Scott. As always, your videos are really informative and helpful. You're my very own chef! Question: I recently heard we want to aim for 150 degrees of heat for the centers of our food. You mentioned 165. Thoughts?

  • @TheGrizzlyB - 150 would be the best temperature for something like a pork tenderloin. However, say a steak would be overcooked at that temperature if you were aiming for Mid-rare. Chicken must be cooked to 165, so pull it out at 160 and allow the carry-over cooking to take it to the optimal temp. Any ground meat product also must be cooked to 165 to guarantee any foodborn illness isn't transfered.
