No skin? That's the best part! Score the skin and let that fat run into the pan, then cook it in it's own fat. Duck fat is seriously the Holy Grail of the culinary world.
I like what you were trying to portray with this video, but I dont think you actually overcooked the second piece enough LOL. Your point wasnt complete.
@UNDguy1987 Wild Game isnt NEAR as likely to have diseases as livestock because Waterfowl isnt treated with chemicals and preservatives. You could eat all your duck RAW and be peachy.
Indeed! Medium Rare is the best way to eat duck......cooked more than that and you have ruined a wonderful piece of meat! Would you eat a ribeye steak well done?
@mylifeisinteresting Duck and Bison don't carry salmonella, so you can pretty much eat them raw. There are a few more wild game that don't carry the disease but I can't think of them at the moment.
Wild duck will not taste as good because of the fish it eats.
I do not consider duck a white meat. I treat it like a filet minon and I agree that overcooked is not good. I used breasts with the skin on and score them with a tic tac toe pattern. I grill them to render the fat and give them marks and then finish them in the oven. Sliced duck breast on a salad is pretty good eats.
Wild duck taste awesome. There is puddle ducks and diver ducks. I like divers too... but the point is that wild duck eats corn and not fish if you hunt puddle ducks. Ofcourse wild duck is not a white meat... that is obvious by looking at it... you must buy your duck in the store... I get it organic, with my shotgun.
i don't know why people cook ANY meat more than medium rare.... might as well go get some jerky at your local gas station. i've convinced a few non-believers myself with duck and even goose breasts.

I love medium cooked duck. Tastes like the best roasted pork chop in the world to me.

I do prefer the meat all cooked, so the second choice of the duck is perfect for me,
try cooking your dog and show us the difference from red to all cooked.
