I cook my collard greens in a skillet....I don't use SWINE however.....I make it from time to time for my co-workers and they LOVE what I call, Jay's Green's From A Skillet!!
I use Olive oil....minced garlic, chopped onions, red crush peppers, chicken broth, salt, pepper, and inion powder....next time I'm going to try it just with Chicken broth....I have it down to a science now....and, yes, it is more healthier than the ol'e plantation, down home , pot cooked greens.
@313designs I want to try your recipe. I use smoked turkey to cook mine and a little chopped onion as well. I only let my greens cook for about 15 to 20 minutes and then I take them off the eye and serve them. My family loves it. :)
:) Looks great! My family usually cooks greens for 1/2 a day, which no doubt kills any and all vitamins that greens can offer. Your way seems healthier..even with the bacon. (It's very easy to portion control bacon, so no biggie.) I love that you mentioned the "crunch". This would be wonderful for ppl who are anemic.
Since when was collard greens "devine" lol...and red chilly flakes also add colour? lol i dunno if i need glasses but i dont think you can see the flakes int he dish unless of course you bring a magnifing glass with you =)

I let mine cook a little longer than yours....for about 30-40 minues on med to low heat.
