  • If you recall from high school chemistry, heat exchange must happen for a chemical to change state. To freeze 0 degree water to 0 degree ice, you must remove a certain amount of heat from the water (per number of molecules). This is the enthalpy of fusion. When water is cooled past 0 degrees without changing state to ice, and then it changes state all at once, the heat from the state change goes into the rest of the water, keeping some liquid while the rest freezes, equilibrium at 0 degrees.

  • @anonymexxx no this is real, the water has to be some sort of purified or reverse osmose water (most bottled waters) this allows the water to reach below freezing but stay a liquid. It doesn't entirely freeze, just a minor crystalization. I left a bottle of aquafina in the freezer for about 30 mins and noticed it had not froze, but as soon as i began to move it around i saw it freeze, I was shocked!

  • What most people do know is that things in equilibrium will stay in equilibrium. It's like a thermal inertia. The thing that most people don't realize, is that crystallization is like a chain reaction. Once several crystals are formed, crystal after crystal will follow. This is why, when you disrupt the water, only a few crystals form, but as you can see it has a domino effect down the entire bottle.

  • I did this in Saudi Arabia. When the water bottle comes out of the freezer into the hot air (90+degrees F) this happens a LOT faster. I never perfected it though.

  • i can do that in coke in bottle... put it in the freezer over night.... then check it if the coke is still in liquid form.... then open it quickly you will see that it quickly turn into soft ice....

  • I believe that it works better with a carbonated liquid since bubbles form much easier and more profusely than in just plain water.
