Looks great but you lost me on the kneading part. Could you come up with a no-knead version of this? That would be great. I find it hard to believe anyone kneads bread anymore after the "no-knead" revolution. Who has time or wants to knead bread anymore when you can get such great bread by just letting wet dough sit there and do it's thing?
Have baked a couple of times mix of 50:50 rye-wholewheat and it's nice to stumble into this video. My home-made recipe is quite similar except that I use Crisco All-Vegetable shortening. I guess butter or margarine works provided one is aware of water content of various fats. Rye bread is quite tricky to me. Besides the fact that rye flour can be of 3 types, that I know of, the dough texture is quite different & a 1st timer can be thrown off of what a correct dough feels like.
@cigiss - You certainly can. It will be sweeter and not as hearty tasting but none-the-less a distinct flavor. I would probably suggest using half as much to avoid having the bread taste as sweet..

@Brighteyes1ful It is designed as a yeasted bread so not much. Sourdough but there will be yeast in that also.
