Gas Giants can be valuable (like the one you mentioned) but most are fragile and can crack...so this has to be evaluated on a pearl by pearl basis.
You don't really want to produce these "gas giants"...they sometimes happen due to bacterial infections inside the oyster's "pearl sac". The "black sack thing" you mentioned will eventually receive a coating of nacre and will become a true pearl.
What the video depicts is the process prior to the coating...something very few people have ever seen.
Depends on the pearl itself...some are indeed worthless but some are incredibly valuable. Almost all things share a similar scale of values... a brand new Mercedes can be vary valuable to some, but to some that very same car might hold no value...and if the same car has crashed and is totaled it may have just residual value.

Yes, quite safe...it will feel different than other pearls: it is large, yet it will be lightweight. It will also feel fragile...
