I don't think an organic chicken makes this recipe any better. I read somwhere that some grocers were marking certain food items organic when they weren't . So I really don't care and don't trust them. A chicken is a chicken is a chicken.
@usaearthling I am a cook and have tried both organic and non. Perhaps there is a 1% difference in taste depending on the amount of herbs, lemons, garlic, etc. Any fool who can can boil water can roast a chicken. The barefoot contessa;s recipe is (by far) the easiest, quickest and most delicious on the web, bar none.
I grow organic but if all large combines went this way we'd (literally) starve due to greatly diminished quantity and the cost involved in extra labor.
