I tried these potatoes the other day. I only had stock cubes rather than real stock but it turned out great! Only thing was that the potatoes were soggy at the bottom of the dish and when I tried to turn them over they broke up a bit. Is this normal?

In Australia, December is the height of Summer. We've been having very hot days recently - but Christmas Day is expected to be cool with rain! Weird weather we're having ;)

I forgot to ask before, what temperature oven do you heat up the oil in and cook the potatoes in? They look amazing.

I heated the oil at about 220 degrees C - then dropped it to 200 when I put the potatoes in ;)
