This is nice interview with chef Matsubara. If you haven't been to Azure Restaurant yet, I highly recommend experiencing it. I went last weekend with friends visiting from the mainland and we had a blast! You gotta try da ribs with the keawe smoke presentation, it's pretty stellar.
