Ingredients Strait from the blog For the peaches: 5-6 cups sliced peaches (if you use canned peaches, do not make the syrup) 1/8 tsp Chinese 5-spice 1 tsp freshly grated lemon zest 1 cup water 1 cups sugar For the batter: 1 stick (1/2 cup) butter (real butter! Do NOT use margarine!) 1 cups sugar 1 1/2 cups self-rising flour (or 1 1/2 cup AP flour, plus 2 1/2 tsp baking powder and 3/4 tsp salt - NOTE: this does not work as well...get some self-rising flour!) 1 1/2 cups milk

i did this friday night. it was good but i did the all purpose flour with baking powder cause i didnt have self rising. it turned out ok but not all the flour mixture came to the top so there wasnt alot of juicieness in mine. my husband liked it though too. but next time ill buy self rising flour. :)
This ended up being a total disaster. Yes, I didn't have the self-rising flour. As a result, the "crust" tasted like spongy pancakes. Questions: How big was that cooking pan? I used six peaches ($8), and I had way too much batter/peaches for a 2 quart casserole dish. I made a 2nd, smaller casserole, but I should have made 2 medium sized casseroles. The biggest problem was the "syrup." It turned to a thick grey goo. The 5-spice was too strong, and I had too much liquid overall. PLS HELP!
@MobileMediaProducts might be able to help a little with this - First, get some self rising flour. I'm telling you it make all the difference. I tried it both ways - trust me. Self rising flour all the way. I don't think the pan will matter if you use the self rising. I cooked mine in a 11x11" square pan and it came out awesome. As for the grey goo - are you measuring sugar with like the individual measuring cups and water with one of those two cup glass measuring cups?
@simplequestions95 hmmmmm. . . I used a 13x13 casserole dish, and it was too much volume for it. Did you use 5 or 6 peaches? Mine were pretty large. I'm sure that contributed greatly to the volume. I should have used a metal pan, I have an 11 by 14 by 2.5 inches. That would have been better. Yes, I used the right gear to measure the dry and liquid ingredients. I may have cooked the syrup too long. When I added the peaches, the pan was still warm, and the liquid did start to darken a bit.
@MobileMediaProducts I used 6 peaches - they were pretty good sized. Maybe next time just use your smaller pan, cook the syrup less and DEFINITELY use self rising flour. I think the flour will make all the difference. I made it the first time with regular flour and baking powder and it was so bad I had to throw it away! The batter was like gum at the bottom of the pan. Good luck. If you think of it, let me know how it comes out next time.
I made this today for a family barbeque, double recipe and it was a big hit. I served it with vanilla ice cream. I felt I had too much liquid but it seemed to have worked out pretty good in the end, but next time I'd like to serve it sooner, I let it set for several hour and it wasn't crispy. All 18 family members said it was delicious so........THANK YOU !!!!!
Except for the simple syrup and the added spice, this technique reminds me of the peach cobbler Hilah made on Hilah Cooking. I REALLY loved her cobbler, and I think the simple syrup idea here is stellar. Can't wait to give this a try.
