Yummy! Is your caldero from the company called Imusa? The lid on your caldero is the same as the one my mom uses, but Imusa seems to not make that lid anymore. The lid they now make is more domed instead of flat and has a chubby black knob that says Imusa on it. I wish they would go back to the old style since the new lids seem to not make a good enough seal.
This recipe as with all recipes can be reduced by simply dividing the ingredients by 1/2 or even 3/4. I think there is an online site that my help you with recipe conversions, perhaps you may wish to look into that for a more specific measurement. Please let me know if it works for you... Are calderos nonstick? I been trying to get one for a long time but I've never cooked with aluminum cookware so I'm a bit unsure about it I'm afraid everything will just stick
@emyluv1 There are calderos that are nonstick, but I have found that they get scratched up really quickly. As for the aluminum calderos-- never fear-- they are easy to prepare for use. You smear oil inside the caldero and place it on the stove. Put on medium heat for a couple of minutes. When it gets hot remove it from the heat, let it cool down then wash it in soapy water. This should keep things from sticking. Also,its best to use medium heat as opposed to higher heats. Good Luck...

i do have a question, instead of adding all the vegetables (green onions, garlic, peppers etc) can u just add sofrito and leave this out? thank u
