i find when chicken is cooked on high heat with smoking oil it becomes far to dry and hard. I have foudn the only way to cook chicken breast nice and tender and soft is to fry on low heat. IT tastes much nicer than chicken cooked on high heat.

Personally I don't believe in "rules" in cooking - you get to be creative, you get to experiment and I think she is right with the "do as you please" motto. Cooking is an art and in art everyone has his/her own way. What she does is putting her own character in her cooking, this kind of chicken stir fry is not traditional but I think it's a fabulous idea. That's how I like to cook :)
